- 1 pound bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 2 teaspoons fresh ginger, grated
- 4 cups chicken broth
- 2 cups water
- 1 tablespoon soy sauce
- 1/4 teaspoon white pepper
- 3 green onions, chopped
- 200 grams egg noodles
- 1 cup bok choy, chopped
- 1 lime, juiced
- In a large pot, heat olive oil over medium heat. Add chicken thighs and cook until browned on both sides.
- Add ginger, broth, water, soy sauce, and white pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove chicken, shred it, and return it to the pot.
- Add green onions, noodles, and bok choy. Cook until noodles are tender.
- Stir in lime juice before serving.
