An easy and comforting Avgolemono Soup recipe for cozy evenings.

Ingredients

  • 4 cups chicken broth
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 cup cooked orzo or rice
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, bring the chicken broth to a simmer.
  2. In a bowl, whisk together eggs and lemon juice.
  3. Remove the broth from heat and slowly add a cup of broth into the egg-lemon mixture, whisking continuously.
  4. Gradually add the egg mixture back into the pot, stirring constantly.
  5. Stir in the cooked orzo or rice, and season with salt and pepper.
  6. Garnish with fresh parsley before serving.

Notes

  • Make sure to temper the eggs to prevent curdling.
