A comforting dish made with Bisquick, chicken, and fluffy dumplings.

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 2 cups chicken broth
  • 1 cup Bisquick™ mix
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 cup frozen mixed vegetables

Instructions

  1. In a large pot, combine chicken and broth; bring to a boil.
  2. Reduce heat and simmer until chicken is cooked through, about 15 minutes.
  3. Remove chicken, shred, and set aside.
  4. Stir in Bisquick mix, milk, garlic powder, onion powder, and black pepper until smooth.
  5. Return shredded chicken and mixed vegetables to the pot.
  6. Drop spoonfuls of the batter over the chicken mixture.
  7. Cover and cook for 10-12 minutes or until dumplings are cooked through.

Notes

  • For a richer flavor, use chicken thighs instead of breasts.
  • Feel free to add your favorite seasonings to the dumpling batter.
