Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, cooking until softened.
  2. Add broccoli and vegetable broth to the pot, bringing to a boil. Reduce heat and simmer for 15 minutes.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in heavy cream, cheddar cheese, salt, pepper, and nutmeg until the cheese is melted.
  5. Serve hot, garnished with extra cheese if desired.

Notes

  • For a thicker soup, blend longer or add more cheese.
