This creamy and spicy Cajun Potato Soup is a perfect bowl of comfort, featuring turkey bacon for a delightful twist.

  • 4 large potatoes, diced
  • 1 cup turkey bacon, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  2. Add onions and garlic to the pot, sauté until onions are translucent.
  3. Stir in the diced potatoes and Cajun seasoning, and cook for a few minutes.
  4. Pour in the chicken broth, bring to a boil, then simmer until potatoes are tender.
  5. Use a potato masher to mash some of the potatoes for a creamy texture.
  6. Stir in the heavy cream and cooked turkey bacon, and heat through.
  7. Season with salt and black pepper to taste.

Notes

  • This soup can be made vegetarian by substituting the chicken broth with vegetable broth and omitting turkey bacon.
