A deliciously creamy pasta dish featuring caramelized leeks and mushrooms, topped with melty Gruyere cheese.

Ingredients

  • 2 cups pasta of choice
  • 1 cup leeks, sliced
  • 2 cups mushrooms, sliced
  • 1 cup Gruyere cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add leeks and cook until caramelized, about 10 minutes.
  3. Add mushrooms and garlic to the skillet, cooking until soft.
  4. Stir in cream, salt, and pepper, then add the cooked pasta and toss to combine.
  5. Remove from heat and stir in shredded Gruyere cheese until melted.

Notes

  • For added flavor, try adding a splash of white wine before adding the heavy cream.
  • Cooking the leeks slowly is key to gaining that sweet, caramelized flavor.
