- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup egg noodles
- 1 cup kale, chopped
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Sauté until vegetables are softened.
- Stir in the garlic and cook for another minute.
- Add the chicken broth, thyme, oregano, bay leaf, salt, and pepper. Bring to a boil.
- Add the egg noodles and shredded chicken. Cook until noodles are tender.
- Stir in the kale and cook for an additional 2 minutes.
- Remove the bay leaf before serving.
Notes
