  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup egg noodles
  • 1 cup kale, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Sauté until vegetables are softened.
  3. Stir in the garlic and cook for another minute.
  4. Add the chicken broth, thyme, oregano, bay leaf, salt, and pepper. Bring to a boil.
  5. Add the egg noodles and shredded chicken. Cook until noodles are tender.
  6. Stir in the kale and cook for an additional 2 minutes.
  7. Remove the bay leaf before serving.

Notes

  • This soup can be made ahead and stored in the fridge for up to 3 days.
  • For a spicier version, add red pepper flakes.
