Cheesy Taco Pasta is a delicious and easy comfort food dish that features a flavorful twist with turkey bacon.

  • 8 ounces elbow macaroni
  • 4 slices turkey bacon, chopped
  • 1 pound ground turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup shredded cheddar cheese
  • 2 cups chicken broth
  • 1 cup corn
  • 1 cup black beans, rinsed
  • 1/2 cup diced bell peppers

Instructions

  1. In a large pot, cook the elbow macaroni according to package instructions; drain and set aside.
  2. In the same pot, cook the turkey bacon over medium heat until crispy.
  3. Add the ground turkey to the pot and cook until browned.
  4. Stir in the taco seasoning, diced tomatoes, chicken broth, corn, black beans, and bell peppers.
  5. Bring to a simmer and then add the cooked macaroni and cheddar cheese.
  6. Stir until the cheese is melted and everything is well combined.
  7. Serve hot.

Notes

  • For a spicier kick, add jalapeños to the dish.
  • Feel free to substitute ground beef or pork if preferred.
