- 8 ounces elbow macaroni
- 1 pound ground turkey
- 4 slices turkey bacon
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 cup corn
- 1 tablespoon olive oil
- Cook the macaroni according to package instructions. Drain and set aside.
- In a large skillet, cook turkey bacon until crispy. Remove and crumble.
- In the same skillet, add olive oil and ground turkey. Cook until browned.
- Add taco seasoning, diced tomatoes, chicken broth, corn, and cooked macaroni. Stir to combine.
- Bring to a simmer, then stir in cheddar cheese until melted. Top with crumbled bacon and serve.
