Ingredients

  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 can corn
  • 4 cups chicken broth
  • 2 tablespoons taco seasoning
  • 1 cup shredded cheese
  • 1/4 cup cilantro, chopped</li
  • 1 avocado, diced
  • 1 lime, juiced

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until softened.
  3. Add chicken breast and cook until browned.
  4. Stir in diced tomatoes, black beans, corn, chicken broth, and taco seasoning.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Shred the chicken and return to soup.
  7. Stir in cheese until melted.
  8. Garnish with cilantro, avocado, and lime juice before serving.

Notes

  • For a spicier soup, add jalapeños.
