- 1 lb chicken breast, diced
- 4 strips turkey bacon, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- salt and pepper to taste
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
- Add chicken and cook until browned. Remove and set aside.
- Add carrots, celery, onion, and potatoes to the pot and sauté until tender.
- Return chicken and bacon to the pot. Stir in chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in heavy cream and cook for an additional 5 minutes.
- Serve warm with bread if desired.
Notes
- For a thicker soup, add a cornstarch slurry.
- You can substitute the chicken with rotisserie chicken for quicker prep.
