A warm and comforting chicken pot pie soup featuring turkey bacon for added flavor.

Ingredients

  • 1 lb chicken breast, diced
  • 4 strips turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add chicken and cook until browned. Remove and set aside.
  3. Add carrots, celery, onion, and potatoes to the pot and sauté until tender.
  4. Return chicken and bacon to the pot. Stir in chicken broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in heavy cream and cook for an additional 5 minutes.
  7. Serve warm with bread if desired.

Notes

  • For a thicker soup, add a cornstarch slurry.
  • You can substitute the chicken with rotisserie chicken for quicker prep.
