Ingredients

  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 cups mixed vegetables (like peas and corn)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté until softened.
  3. Add garlic and chicken; cook until chicken is no longer pink.
  4. Pour in the chicken broth and add thyme, rosemary, and bay leaf.
  5. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  6. Add mixed vegetables and simmer for another 10 minutes.
  7. Season with salt and pepper before serving.

Notes

  • For a richer flavor, add a splash of lemon juice before serving.
