  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar, for strawberries
  • 1 cup whipped cream, for serving

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, mix flour, baking powder, salt, and sugar.
  3. Add cold butter and cut into the mixture until it resembles coarse crumbs.
  4. Stir in heavy cream until a dough forms.
  5. Turn onto a floured surface and knead gently.
  6. Roll out and cut into rounds.
  7. Place on a baking sheet and bake for 15-20 minutes or until golden.
  8. While cakes are baking, mix sliced strawberries with 1/4 cup sugar and let sit for 10 minutes.
  9. Once cakes are cooled, split them in half and layer with strawberries and whipped cream.
