  • 3 ripe bananas
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sour cream
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the bananas with a fork.
  3. Add the softened butter to the mashed bananas and mix until well combined.
  4. Stir in the granulated sugar and brown sugar.
  5. Add the eggs and vanilla extract, mixing until smooth.
  6. In another bowl, whisk together the baking soda, salt, and flour.
  7. Gradually add the dry ingredients to the banana mixture, alternating with the sour cream.
  8. If using, fold in the chopped nuts.
  9. Pour the batter into a greased loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
  10. Let cool before slicing and serving.
