2 pounds Yukon Gold potatoes
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
4 slices turkey bacon, cooked and crumbled
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh thyme, chopped
Instructions
Preheat the oven to 350°F (175°C).
Peel and thinly slice the Yukon Gold potatoes.
In a saucepan, combine the heavy cream, garlic, salt, pepper, and thyme, and heat it over medium heat until warm.
In a baking dish, layer the sliced potatoes, adding the cream mixture over each layer, followed by some cheddar and Parmesan cheese and crumbled turkey bacon.
Repeat layers until all ingredients are used, finishing with cheese on top.
Cover with foil and bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until golden brown and bubbling.
Let it cool for a few minutes before serving.
Notes
For extra flavor, consider adding onions or a dash of nutmeg to the cream mixture.
You can use regular bacon instead of turkey bacon for a richer taste.
