Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with chilies
  • 1 cup beef broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheese

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in black beans, corn, tomatoes, beef broth, and taco seasoning. Simmer for 10 minutes.
  4. Lower the heat and stir in the heavy cream and shredded cheese. Heat until melted.
