  • 1 pound Cajun sausage, sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
  3. Add the onion, garlic, and bell pepper; sauté until the vegetables are soft.
  4. Stir in the diced tomatoes, heavy cream, and Cajun seasoning. Bring to a simmer.
