A comforting and creamy chicken noodle soup enriched with the savory flavor of turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 cup diced onion
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 pound cooked chicken, shredded
  • 2 cups egg noodles
  • 1 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and chop.
  3. Add onions, carrots, celery, and garlic; sauté until tender.
  4. Pour in the chicken broth, thyme, and rosemary. Bring to a boil.
  5. Add shredded chicken and noodles; cook until noodles are tender.
  6. Stir in heavy cream, and season with salt and pepper.
  7. Serve hot, garnished with chopped turkey bacon.

Notes

  • This soup can be made ahead of time and reheated.
  • For a lighter version, substitute heavy cream with milk.
