  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 8 ounces egg noodles
  • 1 cup heavy cream
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add chicken breasts and cook until browned. Remove and shred.
  3. Add onion, carrots, celery, and garlic to the pot; sauté until softened.
  4. Pour in chicken broth and add thyme and pepper.
  5. Bring to a boil, then add egg noodles and cook until tender.
  6. Stir in shredded chicken, cream, and chopped parsley. Heat through.
  7. Crumble turkey bacon on top before serving.
