  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Add garlic, thyme, salt, and pepper; cook for another minute.
  3. Add chicken broth and bring to a boil.
  4. Add chicken breasts and pasta; cook until the chicken is fully cooked and pasta is al dente.
  5. Remove chicken, shred it, and return to the pot.
  6. Stir in heavy cream and heat through before serving.
