  • 1 pound chicken breast, cooked and shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in the shredded chicken, diced tomatoes, chicken broth, black beans, corn, chili powder, and cumin.
  4. Bring to a simmer and cook for 15 minutes.
  5. Stir in heavy cream; cook for an additional 5 minutes.
  6. Season with salt and pepper.
  7. Serve topped with tortilla strips, avocado, and cilantro.
