A rich and comforting creamy gnocchi chicken soup, perfect for a cozy meal.

Ingredients

  • 1 pound gnocchi
  • 4 slices turkey bacon
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cooked chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté onions, carrots, and celery until tender.
  3. Add chicken broth and bring to a boil.
  4. Stir in gnocchi and cook until they float.
  5. Reduce heat and add heavy cream, chicken, garlic powder, and Italian seasoning. Simmer for 10 minutes.
  6. Season with salt and pepper. Serve with crumbled turkey bacon on top.

Notes

  • This soup can be made ahead of time and reheated.
  • For a lighter version, substitute heavy cream with milk.
