  • 4 slices turkey bacon
  • 1 pound Italian sausage
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 12 ounces uncooked lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 2 cups heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add Italian sausage and cook until browned.
  3. Add onion and garlic, cooking until softened.
  4. Stir in crushed tomatoes and chicken broth.
  5. Add the broken lasagna noodles and Italian seasoning; simmer until noodles are tender.
  6. Stir in heavy cream, mozzarella, and Parmesan until melted.
  7. Add spinach and cook until just wilted.
  8. Crumble turkey bacon on top before serving.

Notes

  • This soup can be made in advance and reheated before serving.
  • Feel free to add more vegetables like bell peppers or zucchini.
