Ingredients

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh tortellini
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the sausage over medium heat until cooked through.
  2. Add the onion and garlic, and sauté until translucent.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the heavy cream and tortellini, cooking until the tortellini are tender.
  5. Add spinach and Italian seasoning, then season with salt and pepper to taste.
  6. Serve warm.

Notes

  • This soup can be made ahead and reheated.
  • For a lighter version, substitute half-and-half for the heavy cream.
