1 pound ground turkey
4 slices turkey bacon
1 can black beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes with green chilies
1 packet taco seasoning
4 cups chicken broth
1 cup heavy cream
1 cup shredded cheese
1 chopped onion
2 cloves garlic, minced
Instructions
Cook the turkey bacon in a large pot over medium heat until crisp. Remove and crumble.
Add the chopped onion and minced garlic to the pot, cooking until softened.
Add the ground turkey and cook until browned.
Stir in the beans, corn, diced tomatoes, taco seasoning, and chicken broth. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Stir in the heavy cream and crumbled turkey bacon. Heat through.
Serve topped with shredded cheese.
