  • 8 ounces turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 12 ounces lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, and garlic; sauté until softened.
  3. Add chicken broth and bring to a boil.
  4. Break lasagna noodles into pieces and add to the pot; cook until tender.
  5. Stir in ricotta cheese, mozzarella, and Parmesan until melted and combined.
  6. Add spinach and season with Italian seasoning, salt, and pepper.
  7. Chop the cooked turkey bacon and mix it back in. Serve warm.

Notes

  • For a vegetarian option, omit turkey bacon and use vegetable broth.
