  • 1 lemon, zested and juiced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes, then place them in a mixing bowl.
  3. In a separate bowl, mix together the olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
  4. Pour the mixture over the potatoes and toss to coat evenly.

  6. Bake for 25-30 minutes until crispy and golden, flipping halfway through.
  7. Remove from the oven and sprinkle with lemon zest before serving.
