A delightful potato salad that features crispy smashed potatoes combined with savory turkey bacon, offering a unique twist to a classic dish.

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Boil the baby potatoes in salted water until tender, about 15-20 minutes.
  2. While potatoes are cooking, cook the turkey bacon in a skillet until crispy. Remove and crumble.
  3. Drain the potatoes and let them cool slightly. Preheat the oven to 425°F (220°C).
  4. On a baking sheet, place the potatoes and smash each one gently with a fork.
  5. Drizzle with olive oil and season with salt and pepper. Bake for 20 minutes until crispy.
  6. In a bowl, mix mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, and additional salt and pepper.
  7. Add the crumbled bacon and chopped chives to the dressing and combine.
  8. Once the potatoes are crispy, remove from oven and add to the mixing bowl, tossing to coat.
  9. Serve warm or at room temperature.

Notes

  • For extra flavor, consider adding diced red onions or celery to the salad.
  • You can substitute the turkey bacon with regular bacon if preferred.
