A hearty and comforting chicken corn chowder made in a crock pot, featuring tender chicken, sweet corn, and crispy turkey bacon.

  • 1 pound chicken breast, cooked and shredded
  • 1 can (15 oz) corn, drained
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In the crock pot, combine the shredded chicken, corn, turkey bacon, onion, garlic, chicken broth, salt, pepper, and thyme.
  2. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  3. About 30 minutes before serving, stir in the heavy cream.
  4. Garnish with fresh parsley before serving.

Notes

  • For a thicker chowder, mash some of the corn or add a cornstarch slurry at the end.
  • Serve with crusty bread for a complete meal.
