  • 1 pound boneless chicken thighs
  • 1 can coconut milk
  • 2 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 lime for juice
  • 1/4 cup cilantro, chopped

Instructions

  1. Place chicken in the crockpot.
  2. In a bowl, mix coconut milk, chicken broth, red curry paste, fish sauce, and brown sugar.
  3. Pour mixture over chicken.
  4. Add bell peppers, carrots, onion, garlic, and ginger.
  5. Cook on low for 6 hours or high for 3 hours.
  6. Before serving, shred chicken and stir in lime juice and cilantro.
