A hearty and flavorful chicken taco soup that warms the soul and is perfect for family gatherings.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.
  2. Add chicken breasts, black beans, corn, diced tomatoes, chicken broth, and taco seasoning. Stir well.
  3. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, until chicken is cooked through.
  4. Remove chicken, shred with two forks, and return to the pot. Season with salt and pepper to taste.
  5. Serve hot, garnished with your favorite toppings.
