  • 2 pounds boneless, skinless chicken breasts
  • 1 cup long grain rice
  • 4 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas and carrots

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add rice, chicken broth, garlic powder, onion powder, thyme, salt, and pepper.
  3. Stir to combine the ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and rice is tender.
  5. Add frozen peas and carrots during the last 30 minutes of cooking.
  6. Once done, shred the chicken in the crockpot and stir everything together before serving.
