A creamy and comforting roasted garlic soup that is perfect for chilly evenings.

Ingredients

  • 2 heads garlic
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tops off the garlic heads and drizzle with olive oil.
  3. Wrap in foil and roast for 30-35 minutes until soft.
  4. In a pot, sauté onion until translucent.
  5. Press the roasted garlic out of the skins into the pot.
  6. Add vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Blend the soup until smooth.
  9. Stir in heavy cream and season with salt and pepper.
  10. Serve hot, garnished with fresh thyme.

Notes

  • This soup can be made ahead of time and reheated before serving.
  • For a vegan version, substitute heavy cream with coconut milk.
