  • 4 cups sliced onions
  • 3 slices turkey bacon
  • 4 cups beef broth
  • 1 cup white wine
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon thyme
  • 4 slices of French bread
  • 1 cup shredded Gruyere cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add sliced onions to the pot and cook until caramelized.
  3. Sprinkle flour over onions and mix well.
  4. Add beef broth, white wine, and seasonings. Bring to a simmer.
  5. Return turkey bacon to the pot and cook for an additional 10 minutes.
  6. Serve in bowls topped with French bread and Gruyere cheese, then broil until cheese is bubbly.

Notes

  • For a vegetarian version, replace turkey bacon with mushrooms.
