  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar

  • 1 tablespoon brewed coffee, cooled

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and nutmeg.
  3. In another large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add eggs, vanilla extract, and cooled brewed coffee, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized portions of dough onto a baking sheet, leaving space between each.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
