1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
1 large egg
1/4 cup brewed coffee, cooled
1 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
In another bowl, cream the butter, brown sugar, and granulated sugar until smooth.
Add the egg, cooled coffee, and vanilla extract to the butter mixture and mix well.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
If using, fold in the chocolate chips.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes, or until edges are golden.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
