These Ground Beef Enchiladas are the perfect solution for a quick and satisfying weeknight dinner. Packed with flavor and easy to assemble, they are sure to become a family favorite.

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (15 ounces) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft.
  3. Add the garlic, cumin, chili powder, salt, and pepper; cook for another minute.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and some cheese, roll them up and place them seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the top of the rolled tortillas.
  7. Sprinkle the remaining cheese on top.
  8. Bake for 20-25 minutes until bubbly.

Notes

  • For extra flavor, add black olives or jalapeños to the filling.
  • Serve with sour cream, guacamole, and fresh cilantro on top.
