1 pound ground beef
1 cup chopped onion
2 cloves garlic, minced
1 can (15 ounces) enchilada sauce
8 flour tortillas
2 cups shredded cheese
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft.
Add the garlic, cumin, chili powder, salt, and pepper; cook for another minute.
Spread a thin layer of enchilada sauce on the bottom of a baking dish.
Fill each tortilla with the beef mixture and some cheese, roll them up and place them seam-side down in the dish.
Pour the remaining enchilada sauce over the top of the rolled tortillas.
Sprinkle the remaining cheese on top.
Bake for 20-25 minutes until bubbly.
Notes
For extra flavor, add black olives or jalapeños to the filling.
Serve with sour cream, guacamole, and fresh cilantro on top.
