- 2 cups grated zucchini
- 1 cup whole wheat flour
- 1 cup oats
- 1/2 cup honey
- 1/4 cup olive oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the zucchini, honey, olive oil, eggs, and vanilla extract.
- In another bowl, mix the whole wheat flour, oats, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.

- Pour the batter into a greased loaf pan and smooth the top.
