  • 1 cup whole wheat flour
  • 1 cup oats
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the zucchini, honey, olive oil, eggs, and vanilla extract.
  3. In another bowl, mix the whole wheat flour, oats, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Add walnuts if using, and mix gently.
  6. Pour the batter into a greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool before slicing.
