A creamy and flavorful potato soup enriched with cheddar cheese and infused with garlic and herbs, complemented by crispy turkey bacon.

Ingredients

  • 6 cups diced potatoes
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 cup cooked turkey bacon, crumbled

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until softened.
  2. Stir in the diced potatoes, chicken broth, thyme, and pepper. Bring to a boil, then cover and reduce heat to simmer for about 15 minutes.
  3. Blend the mixture until smooth with an immersion blender. Return to heat and stir in the heavy cream and cheddar cheese until melted.
  4. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a spicier version, add red pepper flakes.
  • Can substitute heavy cream with half-and-half for a lighter option.
