A comforting and hearty hobo casserole made with ground beef and fresh vegetables.

  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 2 cups diced potatoes
  • 1 can diced tomatoes
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the onions and bell peppers, cooking until softened.
  4. Layer the diced potatoes in a baking dish.
  5. Spread the beef mixture over the potatoes.
  6. Pour the diced tomatoes over the top, and season with garlic powder, salt, pepper, and Italian seasoning.
  7. Bake for 45 minutes or until the potatoes are tender.
