A warm and comforting Italian Meatball Soup that features turkey bacon for a delicious twist.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup breadcrumbs
  • 1 egg
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup pasta (small shapes recommended)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large bowl, combine the ground turkey, turkey bacon, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, heat some oil over medium heat. Add the meatballs and cook until browned on all sides.
  3. Pour in the chicken broth and diced tomatoes. Add the Italian seasoning and bring to a boil.
  4. Lower the heat and add the pasta. Cook until the pasta is al dente.
  5. Serve hot, garnished with fresh basil.

  • For a richer flavor, consider adding a splash of red wine to the broth.
