  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup pasta (small shapes like ditalini)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, heat beef broth over medium heat. Add diced tomatoes, carrots, and celery. Bring to a boil.
  3. Once boiling, gently add meatballs to the pot. Cook for about 15 minutes.
  4. Add pasta and simmer until pasta is tender, about 10 minutes more.
  5. Serve hot, garnished with additional Parmesan cheese if desired.
