  • 1 pound chicken breast, cooked and shredded
  • 6 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 3 jalapenos, diced (remove seeds for less heat)
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the diced onion and jalapenos to the pot and sauté until softened.
  3. Stir in the shredded chicken, chicken broth, garlic powder, and onion powder. Bring to a simmer.
  4. Add the cream cheese and shredded cheddar cheese, stirring until melted and creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with crispy bacon and cilantro if desired.

  • This soup can be made ahead of time and reheats well.
