A delicious and comforting soup that combines the flavors of jalapeno poppers with turkey bacon and beans.

Ingredients

  • 1 pound turkey bacon
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 jalapenos, diced
  • 4 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • 1 cup cream cheese
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped cilantro

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add onions, garlic, and jalapenos to the pot and sauté until soft.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the white beans, cream cheese, cumin, and smoked paprika. Stir until the cream cheese is melted and combined.
  5. Season with salt and pepper.
  6. Serve hot, topped with crumbled bacon, cheddar cheese, and cilantro.

Notes

  • For a spicier soup, leave the seeds in the jalapenos.
  • This soup can be made ahead of time and refrigerated.
