  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add ground beef, onion, and garlic; cook until meat is browned.
  3. Stir in Italian seasoning, crushed tomatoes, and beef broth; bring to a boil.
  4. Add broken lasagna noodles; reduce heat and simmer until noodles are tender.
  5. In bowls, add a scoop of ricotta cheese, then ladle soup over it, and top with mozzarella and Parmesan.

Notes

  • For a vegetarian version, substitute ground beef with lentils or extra vegetables.
  • You can top with fresh basil before serving for added flavor.
