  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, eggs, milk, lemon zest, lemon juice, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • For extra lemon flavor, add a glaze made from lemon juice and powdered sugar.
  • These muffins are best enjoyed fresh but can be stored for a few days.
