  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup lemon juice
  • 1 cup raspberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla, then mix in eggs one at a time.
  4. Stir in sour cream and lemon juice. Pour half of the mixture over the crust.
  5. Purée raspberries and swirl into the cheesecake mixture. Pour remaining mixture on top.
  6. Bake for 60 minutes, then turn off the oven and let it cool inside for an hour.
  7. Refrigerate for at least 4 hours before serving.
