  • 1 head cabbage
  • 1 cup lentils, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated parmesan (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare cabbage by boiling the whole head for 2 minutes.
  3. In a pot, heat olive oil over medium heat; sauté onion, garlic, carrot, and celery until soft.
  4. Add lentils, broth, diced tomatoes, and seasonings. Simmer until lentils are tender.
  5. Carefully remove cabbage leaves, fill each with lentil mixture, and roll tightly.
  6. Place rolls in a baking dish, sprinkle with parmesan, and bake for 25-30 minutes.

Notes

  • Feel free to add other vegetables to the filling.
  • Use nutritional yeast instead of cheese for a vegan option.
