- 1 head cabbage
- 1 cup lentils, rinsed
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated parmesan (optional)
- Preheat the oven to 350°F (175°C).
- Prepare cabbage by boiling the whole head for 2 minutes.
- In a pot, heat olive oil over medium heat; sauté onion, garlic, carrot, and celery until soft.
- Add lentils, broth, diced tomatoes, and seasonings. Simmer until lentils are tender.
- Carefully remove cabbage leaves, fill each with lentil mixture, and roll tightly.
- Place rolls in a baking dish, sprinkle with parmesan, and bake for 25-30 minutes.
