A healthy and delightful recipe for lentil and rice vegan cabbage rolls.

  • 1 cup lentils
  • 1 cup rice
  • 1 head cabbage
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook lentils and rice according to package instructions.
  3. In a skillet, heat olive oil and sauté onion and garlic until translucent.
  4. Add cooked lentils, rice, diced tomatoes, paprika, salt, and pepper. Mix well.
  5. Carefully peel cabbage leaves and fill each leaf with the lentil mixture.
  6. Roll up each leaf tightly and place seam side down in a baking dish.
  7. Cover with foil and bake for 30 minutes.

Notes

  • For added flavor, consider adding herbs like thyme or oregano.
  • Make sure to not overcook the lentils for the right texture.
