This Lentil Soup is a delightful blend of turkey bacon and fresh vegetables, perfect for a cozy meal.

Ingredients

  • 1 cup lentils
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 tsp thyme
  • 1 tsp cumin
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. In the same pot, add onion, carrots, and celery. Cook until soft.
  3. Add garlic, thyme, and cumin. Stir until fragrant.
  4. Stir in lentils and broth. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes or until lentils are tender.
  6. Add chopped turkey bacon, salt, and pepper. Adjust seasoning as needed.
  7. Serve hot.

Notes

  • For added flavor, drizzle with olive oil before serving.
  • Can be stored in the refrigerator for up to 5 days.
